Homemade Spinach and Ricotta Ravioli

What you’ll need:

  • For the dough:

    • 2 cups all-purpose flour
    • 3 large eggs
    • 1/2 tsp salt
  • For the filling:

    • 1 cup ricotta cheese
    • 1 cup fresh spinach, cooked and chopped
    • 1/2 cup grated Parmesan cheese
    • Salt and pepper to taste
    • 1 egg (for sealing)

How to make it:

  1. Make the Dough:

    • In your mixing bowl, combine flour and salt.
    • Gradually add the eggs while using the flex edge beater until the dough forms.
    • Knead the dough with the dough hook for about 5 minutes. Wrap it in plastic wrap and let it rest for 30 minutes.
  2. Prepare the Filling:

    • In a bowl, mix together ricotta, chopped spinach, Parmesan, salt, and pepper until well combined.
  3. Roll Out the Dough:

    • Divide the dough into quarters. Roll out one piece at a time using your pasta maker until it’s thin.
  4. Form the Ravioli:

    • Lay one sheet of pasta on your work surface. Place small spoonfuls of filling about 1 inch apart.
    • Brush around the filling with a beaten egg. Lay another sheet of pasta on top and press around the filling to seal.
    • Cut out the ravioli using a pasta cutter or knife. Repeat until all the dough is used.
  5. Cook the Ravioli:

  • Boil a pot of salted water. Cook the ravioli for about 3-4 minutes or until they float. Serve with your favorite sauce!
