Lemon Blueberry Muffins

Lemon Blueberry Muffins

What you’ll need:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • Zest of 1 lemon
  • 1 cup fresh blueberries (or frozen)

How to make it:

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with liners.
  2. In your mixing bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, combine milk, vegetable oil, egg, and lemon zest.
  4. Pour the wet ingredients into the dry ingredients and mix gently with the flex edge beater until just combined. Fold in the blueberries.
  5. Divide the batter among the muffin cups and bake for 18-20 minutes, or until a toothpick comes out clean.
